malt: 83% Coopers Ale Malt, 17% Joe White Wheat Malt (ignore what I said in the insta video)
hops: Citra and Harlequin in boil, whirlpool and dry hop, finished with Vic Secret terpenes
yeast: BRY-97
water: 3:1 sulphate heavy
other: none
BRY-97 is an expensive dry yeast, and I never really used it before this beer. But goddamn, what a machine. I’ve now got plans for an upcoming red IIPA, just to see what it does. I don’t care that none of you want to drink a red IIPA in summer, I’m experimenting here.
Harlequin, on the other hand, is a hop from Perfidious Albion. English hops are mostly terrible in modern hoppy applications, at least in my opinion. Weirdly tea-like and herbal, when I’m chasing dank and fruit. I had my doubts, so I paired it with some of Australia and America’s finest, and it did so much better than I expected. The rumours are true, England’s fruitiest hop. Bloody delicious.
