This is a Belgian Tripel, but it is in no way conventional. It is fermented quite cool for a Belgian yeast (about 20c), in order to not let the esters clash with the passionfruit. Passionfruit has a tendency to feel sour…. even if its not sour. It just has a sour type personality or whatever. I felt that wouldn’t go great with a massive yeast profile.
After the fact, though, I reckon I could have gone harder. Maybe I’ll let it run loose next time I do something similar.
The art for this was fun. I was thinking about the “biblically accurate angels” meme from a few years ago, that are basically hallucinations of utter terror. I went through the bible to find the wildest descriptions of angels to put into the AI prompt, and settled on Ezekiel 1. Have you read that thing? It’s long and repetitive. So I got chatGPT to condense and summarise, then popped that in.
Honestly, AI fucking sucks for accuracy. This is not what the bible told us. but it’s fun.
